Last month, I traveled to Denver to visit Novo Coffee roasters hoping to collaborate with those fine folks on the creation of the perfect espresso blend.
Needless to say, we were successful! After sampling everything under their sun, I decided to pull from a couple of their single origin roasts and custom blend the perfect espresso for Atlas.
Now, I understand that what constitutes the perfect espresso is entirely subjective. So, here is a little insight into Atlas’ mission. Here at the shop, we strive to select and provide the very best product available. ‘The very best’ is sort of relative, though. Some find the rarest small-lot boutique micro-roast bean to be of the highest quality, while others prefer a robust, consistent and satisfying brew suitable for the addition of milk and sweetener. This presents the fundamental problem: How do we satisfy both?
Coffee, while tasting like, well, coffee – can also be bursting with subtle region-specific flavor nuances. For example, we offer two coffees for our drip selection at the shop – Ethiopian and Guatemalan. Our Guatemalan has a dominant flavor profile of milk chocolate, peanut butter and malt. This is the sort of profile that, while sweet and delicious black, is enhanced by the addition of milk and sweetener. In contrast, the Ethiopian has dominant flavors of dark chocolate, citrus and blueberry. This makes for a sharper, darker-tasting brew – the sort of coffee that just sings as a black coffee, but the profile can be somewhat muted with the addition of milk and sweetener.
So, what does this all mean when creating our espresso? Well, 9th Parallel North has characteristics of both. 9th North is a blend of beans from Panama and Ethiopia. The beans from Panama provide a smooth and silky profile of toasted almond, milk chocolate and cherry pie flavors. This is complemented by the addition of the flavors of fresh ripe blueberry, dark chocolate, toasted coconut and wildflowers found in this particular Ethiopian roast.
This all translates to possibly the smoothest, silkiest, most dynamic and robust espresso we have ever tasted. The first sip is appropriately acerbic, washing the palate with a salvo of flavor. The second sip is smooth, sweet and each and every piece of the profile dances, vying for attention. Each sip smoother, begging for another. When paired with milk, the strength of the profile, greater than the sum of its parts, stands out. The flavor of the milk shares the palate equally with the coffee – Smooth, sweet and balanced. And, I assure you, this espresso makes the most divine Mocha ever to be consumed by man or beast.
So yeah, we like 9th North – no, we love this stuff! But we want you to love it too. So, today, 3/16 and debut-day for 9th Parallel North, we want you to come in and try it. So, come on in, ask for 9th North by name and your espresso drink is on the house. Have it big, have it small, have it as a shot, have it iced, have it sweetened – however you do, just have it!
Oh, and where does the name come from? Well, check out the geographic coordinates of Vulcan, Panama and Wellega, Ethiopia ;)
As always, we are so appreciative of you, our fans, our regulars, irregulars – without all of you, we are nothing, really.
Thank you so much for helping Atlas realize the dream, every day.

On Saturday, November 5th, Atlas turns a sprightly 2 years old! We can’t believe it either. On one hand, it feels as though it is all still so new. On the other, most of us can’t remember a time when we went without our Pearl Grey Lattes, Two Hand Chais, and Tea Slushes.
Over the years, Atlas has matured into adolescence. Still champing at the bit each and every morning waiting with child-like anticipation for Boulder to wake up and make their way downtown. Each and every morning, so many of you start your day with us, and it is such an honor to provide you all with that experience.
I mentioned this piece of advice from my father last year at this time, and I think about it every single day: ‘Chris, never forget, that no matter how hard your day might be, how stressful it all just feels, what you are creating, what you are providing to your customers, guests, friends – is likely, and more often that not, the best part of their day. There is no second chance with that. Be the very best you can be, every day.’
Eager, excited, youthful; all great words to describe what it’s like to be on our side of the counter. But, we have also found a little wisdom along the road we’ve traveled. Looking back through pictures and records of our first days, it’s easy to reflect with a chuckle, you know what they say about hindsight. We have grown to become more consistent, more accommodating and hopefully more delicious!
One year ago, we threw, arguably, one of the best parties Boulder has ever seen. OK, maybe not, but it was pretty darn awesome. It sure was fun to celebrate ‘making it.’ While last year our hats were indeed off to you, our loyal and kind friends, this year’s theme is thank you. Thank you for being a part of a dream. Thank you for making the trek as often as you do to share your day with us. Thank you for making Atlas the wonderful community that we have all come to know and love. Thank you for inspiring us to be our very best everyday.
In honor of our birthday and in honor of you, we’d love for you to come down to the shop this weekend, give us the opportunity to thank you in person, and enjoy a cup of tea or coffee on the house.
From everyone here at Atlas,
Thank you, so very very much.

Today we are celebrating our 1st Anniversary… and what a year it has been.
Last September, when Brandon and Chris and I got together, to start planning this great adventure, none of us knew what to expect. We took over the space in a saturated market and poor economy. What we did know is that the three of us were busting with passion, desire, and knowledge of what it takes to run a cafe.
We opened our doors on November 5th, 2009. After tearing the newspaper down from the windows, the paint still drying on the walls, the three of us worked together to begin creating. Sitting here this morning, looking around in the early morning hours, I feel overwhelmed with gratitude and excitement of where we have come, and where we are going.
We are now providing tea to 4 high end Restaurants on Pearl Street. We are home to Boulder Open Coffee Club. We have been featured on Fox Business news. Amazing artists have lined the walls, some deeply rooted and established, others up and coming to the art world…
All of the successes we have had, though, would not have happened with out your continued support behind us. So as much as today is our birthday, it is yours as well. Thank you for making Atlas a home away from home…
Please join us tonight to celebrate with Atlas Purveyors family and friends. We will be having beer from local brewery Boulder Beers, a raffle with great prizes from local businesses, and come and celebrate what a year it truly has been.
To many more,
Special Thanks to our Team and Adopted Family:
Chris McCormick, Chelsea Patti, Kira Wolfson, Jennifer Lazzari, Thomas Crown, and Kendall Ruth.
